GALANGAL: (Alpinia officionalis or A. galanga)

Also known as Low John the Conqueror or Siamese Ginger. Galangal has dark green, sword-shaped leaves, white flowers with pink veins, round red seed capsules, and a rhizomous rootstalk that smells of ginger and camphor. The rhizome has a spicy, ginger-like flavour used in Southeast Asia soups and curries. The young shoots and flowers are eaten raw and the flowers can be boiled or pickled. The rhizome yields an essential oil, essence d’Amali, used in perfumes.

Bergamot

Citrus bergamia

This wonderfully refreshing and renewing oil is expressed from the peel of the bergamot fruit grown in Southern Italy and some parts of Africa. Bergamot leaves are used in Earl Grey tea. Benzoin

Styrax tonkinensis

Benzoin, a member of the Styraceae family, is collected as a resin exuded from the trunk after the bark is cut, and is in solid brown to white brittle pieces. More processing is required to bring the benzoin to liquid form. Benzoin comes from trees native to Thailand and Sumatra, and is an ingredient of incense. Commonly known as ‘friar’s balsam’. Care should be taken to obtain a good quality oil.

CLOVE:

(Syzgium aromaticum) Cloves are the sun-dried unopened flower buds of a dense evergreen tree, they have a strong spiciness that flavors foods and prevents nausea. The flowers are used to soothe aching eyes. Clove oil, from the distillation of leaves and flower buds, is an antiseptic numbing agent for toothache and indigestion. It is added to cosmetics, perfumes, and cigarettes. There are now Clove-based anesthetics.
